Real Texas Chili 1 Tbsp whole cumin seeds 2 lbs beef chuck roast, trimmed (cut into 1/8" dice) 3 onions, peeled, chopped 6 cloves garlic, diced 6 fresh jalapenos, chopped, seeded 2 Tbsp chile powder 1 Tbsp cayenne 1 Tbsp whole oregano leaves 1 28 oz can tomatoes 1 Tbsp coriander Toast cumin seeds at 375 F for 10 minutes; save. In large pot, brown meat in oil over high heat with onions, garlic, and jalapenos. When meat is brown and onions clear, add remaining ingredients. Mash up tomatoes WITH YOUR HANDS and add tomato juice. Simmer 1 hour and correct the seasoning. Cooked beans (made from dried) MAY be added but no real Texan would do this *abomination*. Eat with Saltines. Top with grated Longhorn cheddar if desired. Have lots to drink with it. Then go out and rope cattle, or roust oil wells, or go square dancing, or listen to Walen and Willie and the boys. Don't forget yer chewin' tobacco. --shellEy Rosenbaum Lipman --- To: info@hotchili-mike.se From: Shelley L Rosenbaum Lipman Date: Thu, 3 Jan 2008 09:41:43 -0500
