Crazy Larry's Roasted Garlic Pepper Sauce This one is great for all of you crazies out there who like to delve into a bowl of hot sauce with nothing but tortilla chips. This sauce has a nice overall heat that is not completely overwhelming (due to the pickled habanero) . By the way, it's good to have a nice lager alongside to cool the tongue when needed (of course -it's always nice to have a lager alongside!) 1/2 head roasted garlic 4 pickled habaneros 1 Tbs. lemon juice 2 tsp. whole coriander seeds 1 tsp. chaat masala water The ingredients require a little bit of preparation, but once you have them the sauce is easy to make. Start by pickling the habanero (I prefer to pickle it along with some onions and garlic, but try your favorite pickling method). After you have your pickled habanero you'll want to roast the garlic (dry roast it - don't use any oil), and also grind the coriander seeds into a powder. Blend all ingredients (you may want to de-seed the habanero if you don't want it too hot) and slowly add water until it has the desired consistency. Chill for a week or two in a wide-mouth jar.
