Onza Roja Sauce This is a medium hot red sauce used as a general picante pick me up for all foods. It has a fresh citrus taste. 8 Onza Roja chiles 80 ml red wine vinegar 2 tsp. White sugar 1 tbs. Concentrated tomato puree 1 tsp. Chopped fresh oregano ½ clove garlic ½ tsp. Vanilla extract ½ tsp. Olive oil Rinse, stem and seed the chiles. Bring the vinegar to the boil in a small saucepan. Remove from the heat and add the chiles tearing them up as you do. Leave to soak off the heat for 20 minutes. Remove the chiles from the vinegar and reduce to a pulp either by chopping or in a blender with some of the vinegar. Strain out the skins of the chiles and discard. Add the pulp to the remaining vinegar with the tomato puree, oregano, garlic, vanilla and sugar. Stir over heat for a couple of minutes then set aside to cool.
