Tomato Taco Sauce

8     qt paste tomatoes peeled, cored and finely chopped
2        cloves garlic crushed
5     C  onion chopped
4        jalapeno peppers seeded and chopped
4        long green chilies peeled, seeded and chopped
2-1/2 C  vinegar
2     T  salt
1-1/2 t  black pepper
1     T  sugar
2     T  oregano leaves
1     t  ground cumin (optional)

Combine all ingredients, bring to boil, reduce heat and simmer, stirring
frequently until thickened (about 1 hour). Pack hot into pint jars.
Process as above.
