Johnny's Salsa Fresca This fresh salsa is great with tortilla chips. If you're like me, you won't stop dipping until you've eaten every chip in the bag! Salsa fresca can also be used as a topping for grilled meats, tacos, burritos, etc. 1 lb. ripe Roma tomatoes, chopped 1/4 white onion, finely chopped (a little less if it's a strong onion) 2 or 3 fresh serrano chiles, finely chopped juice of 1/4 lime 2 tablespoons fresh cilantro, finely chopped 1/2 teaspoon salt (more or less to taste) fresh-ground black pepper (to taste) In a large bowl, mix together tomatoes, onions, chiles, and cilantro. Stir in fresh lime juice, salt, and black pepper. To improve flavor, let salsa sit at room temperature for at least 15 minutes before serving. Before you dip, try this chip tip: Spread half a bag of tortilla chips on a cookie sheet and bake at 350 degrees for about five minutes. They'll be hot and crispy, just like restaurant chips. And the best part? You can tell your friends you made them yourself!
