Salsa Verde (Green Salsa) This is a great "green salsa" recipes. It is very easy to make and even more fun to eat. It tastes wonderful on chips, and is especially good to use as a sauce for chicken enchiladas! Ingredients 4 cups water 2 tsp. salt 2-3 cloves of garlic 2-4 chile serranos 1 lb tomates verdes, (tomatillos) husks removed; find them in any grocery store 1/2 cup cilantro 1/3 cup chopped onion In a saucepan, bring the water and one teaspoon of salt to a boil. Then add the garlic, chiles and tomates verdes. Simmer uncovered until the tomatillos start to turn a lighter shade of green.. Drain but reserve one half cup of the liquid. Transfer the garlic, chiles, tomates verdes and reserved liquid to a blender. Add the cilantro and remaining salt and puree. Transfer to a bowl Stir in the onion and let the sauce cool before serving. I sometimes like to eat it warm though. Serve this salsa with any kind of meat, especially pork! Enjoy!
