Tomato-Green Chile Salsa

3C tomatoes, peeled, cored and chopped
3C long green chilies peeled, seeded and chopped
3/4C onion chopped
1 Jalapeno pepper seeded and finely chopped
6 cloves garlic, finely chopped
1-1/2C vinegar
1/2t ground cumin (optional)
2t oregano leaves
1-1/2 t salt

Combine and process as above.

Yield 3 pints
