Basic Buffalo Wings This is the classic recipe created late one night (a time at which as so many good things are) in the Anchor Bar in Buffalo, New York. It's as close to the real thing as you can come. Of course, you could always use one of those bottled sauces. But it's not authentic! Ingredients: 6 tablespoons butter Red pepper sauce to taste Vegetable oil, enough for frying 3 pounds wings 1/4 pound blue cheese 1/2 cup mayonnaise 1/2 cup sour cream 1 tablespoon lemon juice 1 tablespoon wine vinegar Makin' It: For the dip, mash the blue cheese, leaving some lumps, in a small bowl. Whisk in the mayonnaise until blended. Add the sour cream, lemon juice and wine vinegar and keep refrigerated until serving. For the wings, melt the butter in a saucepan; add red pepper sauce and remove from heat. In a deep fryer or a large frying pan, heat vegetable oil to 375*. Fry the wings in batches without crowding until golden brown. Toss the wings with the spicy butter and serve with the dip and crisp celery stalks. source: http://www.pickeringonline.com/wings/
